Tofu Smofu

I've been thinking about different foods that my family could try. We eat only whole wheat pasta, bread, tortillas, etc and brown rice. None of that white stuff. I have to admit that a large chunk of our grocery budget is spent on fresh produce. We just can't get enough fruit and veggies at our house. So, an obvious next step in our quest for good health was to try out some tofu. I've never eaten tofu, at least that I'm aware of. Brandon hasn't either.

Today I bought some. When Brandon came home from school, he asked if we had any dinner plans in the works. I've been really bad about menu planning lately, so we often fly by the seat of our pants when it comes to dinner. Knowing that Brandon would be skeptical, I sheepishly replied that I had a couple ideas in mind. He supposed that the grin on my face meant that I didn't feel like cooking and was "cooking" up a scheme to get out of it, IE Brandon is cooking or we are going out. That also has been happening more regularly recently, must have something to do with me being eight months pregnant:) I said that I was planning on cooking dinner, I just wasn't completely sure about the recipe.

It is about this point in my story that Brandon opened the refrigerator and spotted the tofu. He asked me if dinner tonight had anything to do with the tofu sitting in the fridge. Poor man, he has a wife that is making him try tofu. I explained that I was planning on making tofu tonight, but that I was still looking for a recipe, as I've never cooked with tofu before, ever. He nodded absent mindedly, and I got busy looking for a recipe.

We ordered a pizza. The End.

P.S. I still have an unopened package of tofu in my fridge. Anyone have a good recipe?

The Pizza came from a place that we had never tried before. It was really good. The 3 of us ate the whole thing! And so we await the tofu adventure (not with great anticipation).

This is Jenny, your cousin Randy's wife. I found your blog from one of your sisters' blog. :)
We love tofu at our house. You can put it in an asian soup, pan fry tofu with a little sauce and add a few vegetables in, or cook tofu with minced pork and vegetables.
If you like spicy food, ma'po tofu is one of the best/easiest dishes you can make. It kinda has a strong smell so I'm not sure how being 8 months pregnant is going to help.

Let me know how your tofu turns out. I have never tried it before either. I haven't been to anxious to try it though.
